Colds in a plate and dishes with a story at the ASTRA Museum!
The dishes: piftie in a plate/ crayfish in a plate, bean soup with smoked pork were and still are indispensable during this time of year in Transylvanian villages. The recipes are inherited but also collected in the field research of the specialists from the ASTRA Museum in the work of repertory of the traditional recipe book.
Crayfish were appreciated especially for their nutritional values, a reliable help in the face of the frosts of the past; today modernity has discovered other benefits of consuming these dishes, benefits that in the collective mind have been inherited as beneficial practices and unavoidable in this period of traditional cuisine. At the ASTRA Museum you will have the opportunity to experience the preparation of cold meats, according to inherited or discovered recipes, a clear example of the happy and ingenious use of all resources, as everything had a purpose in the Romanian peasant household.
We invite visitors to rediscover the tools of the past that were used to prepare and add flavor to these dishes. You will also be able to observe how the ingredients were preserved over the winter, how they were preserved for a long time, preserving their nutritional properties and taste.
On Saturday and Sunday, gastronomic workshops will be held that will illustrate all the stages of preparing the ingredients necessary for making meatballs: pork legs, ears, knuckle, smoked meat bones. And after the meatballs are left to rest and set, they will be served, along with other dishes with a story of traditional Romanian cuisine. The second dish, which will be served hot on both days, will be smoked pork soup, as in traditional cuisine, after the pig was slaughtered, soups and dishes were pleasantly complemented by a smoked bone.
